Eggs in a Nest

Whether you call this eggs in a nest, eggs in a hole, or eggs on a raft, it all means one thing: a delicious breakfast that is oh-so-easy.

My family and I love camping. I went camping for weeks each year when I was little, and my husband, boys and I still go every summer. There is just something about being out in nature that helps push away all those pesky daily distractions, and makes camping memories some of the absolute best.

This eggs in a nest recipe is one of our favorite camping meals. It’s super simple to cook up and a delightful way to start the day. It works great in a cast iron skillet over the fire if you are heading out to the woods this weekend (I’m jealous).

Serve this easy breakfast with some fresh fruit and the whole family will be full of happy campers. If you are at home, add a green smoothie for a balanced and delicious breakfast.

Gather up your ingredients. For this simple recipe you will need:

  • Butter
  • Bread slices: You can use any type of bread you like. I prefer whole wheat or sourdough bread. I can also totally get on board with cinnamon raisin bread.
  • Eggs
  • Salt and pepper

Instructions

Step One: Use a cookie cutter to cut a hole in the center of each slice of bread to make the nest. I love using cookie cutters to make this fun for my kids. Heart on Valentines’ Day! Evergreen tree on Christmas morning! Bunny on Easter morning! The possibilities are just endless… If you are less enamored with cookie cutters, or perhaps an adult, a biscuit cutter, rim of a glass or a butter knife will also work.

Step Two: Butter both sides of each slice of bread.

Step Three: Add a little bit of butter, olive oil, or cooking spray to a large skillet over medium heat. Put the bread in the pan, and toast lightly on one side. (Tip: Don’t skip the extra butter in the pan – the bread is already buttered, but you still need something to keep the eggs from sticking).

Step Four: Flip the bread over and crack the egg into the center of the nest. Cook a couple of minutes, until the egg white begins to set and the bread is a toasty golden brown.

Step Five: Flip the bread over again and cook until the egg yolk is done to your preference. I like runny yolks, so for me this is only another minute or so.

Hint: Don’t forget about the center of the bread (that cute shape you cut out). Toast that up in the skillet, and use it to dip into the egg yolk. Honestly, the best part of this easy recipe in my opinion!

Notes

Substitutions: You can use any type of bread you like in this recipe. I prefer whole wheat or sourdough bread. Try cinnamon raisin bread for a delicious sweet treat!
